Carbohydrates Unplugged: A Symposium on Carbohydrates and Health

With the recent popularization of low carbohydrate diets such as the Atkins, South Beach, and Zone diets, carbohydrates have been catapulted to the forefront of the media. On Saturday, January 22, 2005, the Department of Human Biology and Nutritional Sciences at University of Guelph is hosting a symposium to promote the facts and dispel the myths surrounding dietary carbohydrates. The goal of the symposium is to educate the general public, to enable consumers to make informed dietary choices based on scientific evidence rather than ideas conveyed by the popular media.
